One of my favorite dish….
1 Kg Chicken (cut into medium pieces)
4-6 Garlic cloves
1 Inch piece of ginger
1- 1/2 Tbsp Red chilli powder(or as per taste)(I like more spicy so I added more)
1 Tbsp garam masala
Instead of these you can use kala masala which we make in Maharashtra
1-1/2 Tsp Turmeric
pinch of Hing/Asefoetida
Salt as per taste
1/4 Onion sliced long
2 Tbsp oil
Coriander for garnishing
Clean and wash Chicken and drain all water(try to drain all water). Now make ginger-garlic paste in mixer(I used mortar & pestle, it gives more taste). in a bowl take chicken, add ginger garlic paste and all other ingredients except onion and coriander, mix well and set aside for minimum 30 min, or 1 hour. now in a pan heat oil, add onion and cook on medium high heat till it gets translucent, add marinated chicken and keep stirring for 10 min till the color of chicken gets changed from outside.
Now close the lid of pan and cook the chicken on low flame until chicken gets tender(when it gets done meat leaves the bone from sides). Dont add water B’coz chicken leaves its juices and chicken will get cook in its juices. after 20 min check the chicken is tender or not and then remove the lid. again cook till all water gets vaporize, garnish with coriander.
