Mushroom, One of the healthy food which is low in calories and excellent source of B vitamins and many other minerals. It also says that it provides Vitamin D when it exposes to sunlight.  There are so many types of mshrooms, some of them are poisonous too. We mostly get the while mushroom which is available in market easily.
Mushrooms also known as meat for vegetarians 🙂

250gm Mushroom (cut into desired shape)
1 red tomato chopped finely or 1/2 cup tomato puree
1 large onion or 1 1/2-2 small onions(cut into long or small)
1 Tbsp Ginger Garlic paste
1-2 green chillies (cut as you like)
1/2 Tsp Mustard seeds/rai
1 Tsp cumin seeds/Jeera
10-12 curry leaves/kadhipatta
1 1/2 Tsp red chilli powder
1/2 tsp Turmeric
1 Tbsp cumin-coriander powder
1/2 Tsp Garam masala
1 Tejpatta/bay leaf, Star anise (optional)
2 garlic cloves minced/chopped finely
1 Tsp Kasuri methi
1/2 Tbsp Lemon juice
3 Tbsp Oil
1 Tbsp Butter
Pinch of hing
Salt as per taste

In a pan heat oil and add ginger garlic paste, half of kadhipatta and onion saute till onions color changes to pink(add little salt), now add green chilies , tomato and cook till its mushy and oil separates from sides. Add turmeric, hing , cumin coriander powder and red chilli powder. Now add mushrooms, and salt mix well and close the lid and cook on low heat till mushrooms gets soft and cooked, sprinkle the garam masala.
let the curry shimmer on low heat, meanwhile prepare a special tadka by heating butter in another pan , add mustard seed and let it pop, add cumin seeds, garlic, tejpatta, star anise, remaining curry leaves and pour hot onto shimmering curry and mix well. pour lemon juice and kasuri methi , garnish with coriander and serve hot with chapati/naan.

1) Never cut mushrooms for long time as it gets black while exposes to oxygen. Cut just before the use in the dish.
2) You can use tomato puree instead of tomatoes, but I like the taste of fresh tomatoes.
3) Don’t add water, as mushroom leaves itself.
3)Kasuri methi is optional but still it gives nice flavor and aroma to the dish.
