Methiche laddu or ladoo is one of the traditional, Maharashtrian dish which people prefer to eat in winters. It is also a Ayurvedic medicine itself. It can be eaten to cure joint pain in winters and also after pregnancy .
Fenugreek has many uses in Indian cooking, as it gives heat to body, it is a good source of calcium, also it helps to prevent hair fall(we mostly suffer hair fall during winters because of cold weather).
Almond.. everyone knows Almond very well. Its is rich in Vitamin E, Vitamin B, Diatery fibers, essential minerals and also good fat.It is good for hair, skin and health too.
Aliv/Watercress seeds contains significant amount of calcium, iron,manganese. Also contains Vitamin A,B6, C & K. It is also known as source of omega-3 fatty acid and antioxidant.
Other ingredients also has their own properties which makes these laddu very healthy and nutritious.
50 gm fenugreek/Methi seeds ( if you dont like bitter taste of methi then take only 2Tbsp)
2 Cup wheat flour
1 cup or 1 1/2 cup dry coconut grated (roasted golden color)
1 1/2 cup almonds (roasted & corsely grounded)
1 Cup dry date powder/Kharik powder (roasted & corsely grounded)
1/2 Cup Kaju powder (roasted & corsely grounded)
1/4 Cup Aliv (Optional)
2 1/2 Tbsp edible gum/gond/Dink (Optional)
2 Cup peanut oil or any oil or desi ghee
2-2 1/2 Cup jaggery or you add as per your taste
In a pan, roast the fenugreek seeds on low flame till it becomes golden color(stir continuously), set aside, let it cool and make powder in a blender (if using fenugreek powder, roast it till golden color and set aside). Roast the wheat flour till golden brown color and set aside. Roast aliv till changes the color, let it cool and make powder in blender.
In other kadhai heat some oil, fry the gum on lowflame, remove from oil and keep aside . Mix all dry fruit powder, coconut, aliv powder and gum(mash it) except fenugreek powder.
Now heat remaining oil and the fried oil of gum in a big pot, add jaggery and let it melt, now add fenugreek powder mix well(stirring continuously). When it will start to bubble, add dry mixture of flour, dry fruit powder slowly and stir continuously, Mix well( try to make it lumps free). Take small amount of mixture and make laddus using hot mixture.
1) If possible roast whole wheat and then make flour.
2) Don’t grind dry-fuits powder very coarsely, it will be difficult to make laddus.
3) When frying gum, make sure it will fry from inside and do not burn. You can mash with fingers to check.
4) When Adding jaggery, always remember.. dry dates adds little sweetness in it.
5) To make laddus, the mixture need to be hot or more warm.. it will help to form laddu shape. If it cools, heat it again on low flame.
