Lady’s fingers/ Bhendi/Okra one of the most nutritious vegetable. It is a great source of dietary fibers, minerals, and vitamins. The pods are one of the rich sources of mucilage substance that help in smooth peristalsis of digested food through the gut and ease constipation condition. The pods are also a source of vitamin A, flavonoid anti-oxidants such as beta-carotene, xanthin and lutein. Fresh pods are the good source of folates.
I love Bhendi and I like it stir fried. I remember, when I was a child I used eat raw bhendi after washing it 😛

8-10 Ladyfingers/ Bhendi
2-3 finely chopped green chillies(or as per taste)
2-3 cloves of garlic( paste)
1/4 Tsp Mustard seeds
1/2 Tsp cumin seeds
1/4 Tsp of Turmeric
pinch of Asefoetida
2 Tbsp chopped coriander leaves
2 Tbsp Peanut powder(roasted and coarsely grinded) (optional)
1 Tbsp oil

Wash and dry ladyfingers and cut in desired shape. In a pan heat oil, add mustard seed and let it splutter. Add cumin seeds, garlic paste and green chillies saute till garlic become gets golden color. Then add turmeric and asefoetida, add ladyfingers and mix well, let it cook for 1 min and add salt, mix well. let it cook for another 2 min, now cover it and cook for another 2 min or till its done.  Peanut powder, add coriander leaves and serve.

1) Make sure that ladyfingers are completely dry, otherwise it will get sticky.
2) Do not add water.
3) Do not over cook the ladyfingers, it doesn’t taste good.
4) Peanut powder is optional, its just for crunchiness.
5)Adding little lemon juice can help to prevent stickiness.
