Who doesn’t know vada pav… a famous and yummy street food from Maharashtra, specially from Mumbai.
Vada is the potato fritters which is made using boiled potatoes, spices coated with gram flour batter, and deep fried. Pav is unsweetened bread. It is served with one or two chutneys. and fried green chillies.
Makes 8 vadas
Gram flour batter:
1 1/4 cups gram flour (besan)
1/2 teaspoon Red chilli powder
1/8 tsp Turmeric powder
1/8 Tsp Ajwain/Carom seeds
salt to taste
small pinch of cooking soda/Soda bicarbonate
water to make batter(approx 1/4 cup)
1 Tbsp Chopped coriander (optional)
1/2 Tsp Coriander-cumin powder(optional)
pinch of asefoetida(optional)
6 medium sized potato
3-4 green chillies
2’’ inch ginger
3-5 Garlic cloves
½ Tsp turmeric
4 Tsp cumin seeds
1 ½ Tsp coriander- cumin powder
1 1/2 Tbsp oil
pinch of asefoetida
5-6 Tbsp chopped coriander leaves
salt for taste
Oil for deep frying.
1/2 Onion chopped finely (optional)
Mix all ingredients of batter, add sufiecient water to make smooth and thick paste. set aside for 12-15 min.
Wash and boil potatoes in pressure cooker upto 2 whistle or untill it gets cooked on medium heat. Let it cool and peel of the skin. And grate/ mash it. Meanwhile make ginger garlic paste, make green chilli paste.
Heat oil in a pan, add cumin seeds and let it splutter, add ginger garlic paste saute till it becomes pink, add green chilli paste saute for 30 sec, add turmeric, asefoetida and mix well.
let it cool and add into mashed potatoes, add coriander-cumin powder, salt(be careful as we already added salt at the time of boiling), chopped coriander and mix well. Divide the mixture into 8 equal parts. Shape them into ball and flatten a bit.
Heat enough oil for deep fry, take ball and deep into gram flour batter. Deep fry till it becomes golden and crispy from outside.
Drain on tissue paper to remove excess oil.
Now slit Pav in center, spread some dry garlic peanut chutney, or garlic chutney, spread chopped onion and place the vada and enjot it hot. 🙂
1) Add some salt at the time of boiling.
2) Batter should be thick so don’t add too much water.
3) Do not add water at a time.
