1/2 Cup cracked whole wheat
2 Cups water
1/2 & – 1 Cup milk
1/2 cup & 2 Tbsp grated Jaggery(or more as per taste)
2 Tbsp raisins
4 Tbsp almonds, cashew
1 Tbsp clarified butter/desi ghee
1/4 Tsp green cardamom powder/ 1-2 Cardamom crushed
1/8 Tsp Nutmeg powder
pinch of salt

In a bowl take cracked whole wheat and 1 1/2 cup water, soak for at least 1 Hour or overnight. Meanwhile soak jaggery in 1/2 cup remaining water. In a pressure cooker take the whole wheat mixture with water, add salt and cook till one whistle, let it cool and remove the lid. Now place cooker on medium heat, add 1/2 Cup milk and let it cook stirring occasionally. Once it starts boiling, add strained jaggery water(do not add once at a time), mix and let it cook (taste for desired sweetness, if not add more jaggery). Heat another pan on medium heat. Add raisins, fry till it starts to puff. Remove from the ghee and add it to cooked wheat kheer. Now add almond, cashews and fry till golden color,add fried dry fuits directly into kheer along with ghee , add cardamom, nutmeg powder, mix well and cook for 5 minutes.
Garnish with dry fruits. serve hot or cold. Enjoy on any occasion 🙂

1)One can use store brought cracked wheat. I used homemade cracked wheat.
2)I like less sweet so added only 1/2 cup and 2 Tbsp jaggery. one can add more jaggery if wish.
3) I soaked jaggery because many times its has some fine stone particles and some other particles of dust which can ruin your dish, so if making any liquid dish using jaggery, alsways soak it into water then strain it.
4)One can use Panjabi shakkar or sugar.
5) Wheat kheer tends to thick once it is cold. You can add more milk to make it thin. just add the milk and cook it for 2-3 minutes.
