Padwal/Snake gourd or Parwal….is know as a vegetable in India but its not only a vegetable but can be used as medicine. Snake Gourd contains a rich variety of nutrients, vitamins, and minerals that are essential for human health, including significant levels of dietary fiber, a small number of calories, and high levels of protein. In terms of vitamins, snake gourd possess vitamin A, B, C, as well as manganese, magnesium, calcium, iron, potassium, and iodine. Some of the most important health benefits of snake gourd include its ability to improve the strength of the immune system, reduce fevers, detoxify the body, improve the digestive processes of the body, increase hydration in the body, treat diabetes, boost the strength and quality of the hair, and aid in weight loss.
I never ever made it or ate it before. But I so wanted to and finally I brought it form grocery store. I was searching for the recipe and I came across to Master chef Sanjeev Kapoors’s Dahi Padwal recipe. I followed the recipe but added some of my ingredients. But trust me, It tasted heavenly and My husband was speechless 🙂

6 Small Padwal/Snake gourd( washed,Scraped and halved vertically)
1/2 Onion(finely chopped)
1 Bay leaf
1-2 dry red chillies
2-3 Garlic cloves
1/8 Inch of ginger
1 1/2 Tsp red chilli powder
1/8 tsp turmeric
2 Tsp coriander cumin powder (1 1/2 TSp:1/2 tsp)
1/2 cup Curd
salt for taste
1 1/2 Tsp oil
Heat oil in the pan on medium , add bay leaf and cloves. now add chopped onion and cook for 2 minutes. Add padwal saute for 30 sec, cover and cook for 2-3 minutes on low flame. Now add ginger garlic paste, saute for few seconds and add all dry ingredients. Mix well. add curd, mix well and again cover it for 4-6 minutes or until padwal gets cooked completely.
Garnish with Coriander, and serve.
