Few days back we were celebrating a friend’s birthday (well, I wanna thank one of my dearest frnd Archana to initiate, plan a beautiful party and suggest us cuisine too). We decided to do potluck but we were bored eating Indian, we wanted something different than Indian dishes and we ended up on continental dishes. I wanted take an appetizer but wanted something easy and healthy for this party. I was searching for the recipes and I came to Martha Stewart’s Tomato Avocado toast. By reading it, I loved the idea of Avocado and Tomato, also it’s healthy. I decided to make it but made few changes. It is a very healthy and tasty dish which everyone will like for sure. It is a perfect dish for any party.

Ingredients:
1 small baguette (I bought it from safeway)
2 tbsps Butter/Olive oil
2 ripe avocado
1/2 green chili (Optional)
1-2 or more teaspoon fresh lemon juice
2 Tbsp finely chopped onion
Coarse salt and ground pepper
1 pint grape tomatoes, quartered or 1 1/2-2 Roma tomatoes(chopped finely)

Method:
Preheat oven to 350 degrees.
Slice baguette diagonally into sixteen 1/2-inch-thick slices; brush both sides with a total of butter. Bake on a baking sheet until golden, about 8 minutes(mine took 10 minutes). Meanwhile take tomatoes, add little salt and black pepper powder, mix well and set aside.
Halve avocados lengthwise and remove pit; scoop flesh into a small bowl. Mash with green chili and lemon juice; add coarse salt and ground pepper, add chopped onion and mix well. Spread this avocado mixture evenly on toasted bread; top with tomatoes. sprinkle some black pepper and serve.

Tip:
1) I loved butter taste more than Olive oil as Olive oil has strong smell and taste.
2) Mixing tomato, salt and ground pepper adds more taste to dish.
3) I used Green chili to add little spiciness, one can just skip the green chili if wish.
4)Onion adds little crunchiness and taste to avocado mixture.
5) storing avocado mixture…. put the whole seed of Avocado into the Avocado mixture directly, it prevents avocado mixture turning black.
