There is no need an introduction for Dahi vada or dahi bhalla. It is a famous street food all over India. The traditional recipe calls deep frying for vadas/dumplings which is made by Urad dal but this recipe uses microwave method instead of deep frying which makes it fat free. This recipe is inspired by my dear friend Anita Mokashi’s Fat free dahi vada recipe. She’s an excellent Photographer and cook. She has this amazing blog Crave Cook Click , where she shares her amazing recipes and photographs taken by her. Another amazing thing about this recipe is, we are using Moong Daal/Split Yellow Moong daal instead of Urad daal. I Followed Anita’s recipe but added some more ingredient.
3/4 Cup Yellow Moong daal
2 green chili
1/2 inch Ginger
1/2 Tsp Cumin
3 Tbsp Corinder leaves
salt for taste
water to soak Daal
3 Tbsp curd
1/2 Tsp Baking soda
Oil for greasing
for Garnishing :
Mint Coriander chutney/Green chutney
Tamarind Dates chutney/Khatti mithi chutney
Roasted cumin coriander powder, Red chili powder
1 cup curd
2 Tbsp Sugar (or as per taste)
pinch of salt
Take all the ingredients and beat till its smooth.
Soak Moong daal for 4-6 hours, drain water completely. In a blender jar add daal and other ingredients except baking soda. Now grind the mixture until smooth. now add baking soda and mix well.
Grease 6-8 microwave safe small bowls, add 1 Tbsp batter. Microwave it for 1- 1 1/2 minutes, 3-4 bowls at a time. Remove from bowl using spoon/knife and let it cool completely. follow the same method for remaining batter. Now Soak them into cool water for 1 minutes. Using both palms, press the vada to remove any excess water.
Take a serving plate and place all vadas. Pour beaten Curd/Dahi on vadas. Sprinkle some red chilli powder, Roasted cumin coriander powder, Green chutney, Sweet chutney. Serve instantly or you can refrigerate for 20-30 Minutes.

1) One can skip green chili, ginger, coriander and cumin to make plain vadas.
2)Instead of baking soda, one can use fruit salt.
3)Adding curd helps grinding batter, also helps with baking soda to react. If using fruit salt/Eno just skip the curd.
