3/4 Cup Tamarind(cleaned and seedless)
3/4 Cup Dates
3/4 Cup or little less jaggery
1 Tsp roasted Cumin Coriander powder
black salt/ salt for taste
1/2 Tsp red chili powder
1/2 Cup Water
In a thick bottom pan take 1 cup water, tamarind, dates and simmer it for 4-5 minutes. Now add jaggery and cook on low flame until it thickens a bit. Add all other ingredients, cook for another 2 minutes. Take off from the gas and let it cool. Put in blender and blend till it gets nice and smooth texture. Now strain, keep in air tight container and refrigerate.
Another method is:
Soak Tamarind water and Dates in 1 cup water each, separately for at least 1 1/2 hours. remove all the pulp from tamarind, strain it. Now take all tamarind pulp, soaked dates with water and other ingredients and blend it till it gets nice and smooth texture.
keep in air tight container and refrigerate it for longer use.
1) Both type of chutney tastes awesome.
2) One can use more or less water to make of consistency they like.
3)Dates has sweetness, so do not add all jaggery at once.
