Parsnip…looks same like carrots just in cream color. It is high in vitamin and minerals, specially Potassium. It also contains antioxidants and dietary fibers. It is anti-cancer, also reduces the level of bad cholesterol. One day I went to grocery store and found Parsnip. I have read about it many times, but never tried. This is the first time I bought it. I searched for soup recipes using Parsnip, and found one. I made it with few changes and totally loved it.

1/4 cup Parsnip (peeled, remove shoot(the center part like carrot), and cut into half inch pieces)
1/4 cup chopped onion
1  chopped carrot
half stick of celery (cut into 1/2 inch pieces)
1 garlic clove
1/2 inch Ginger
1/8th Tsp  dried Thyme
salt for taste
2 1/2 vegetable broth
1/2 cup of water
black pepper powder
1 Tsp olive oil/butter
Nutmeg powder(optional)
lemon juice(optional)

Heat oil in a pan. Add all veggies except parsnip. Cook til on low heat till onion gets soften. Now add parsnip, vegetable broth, thyme and let it boil. Now cover the pan cook everything for 15 minutes or until all veggies are tender. Now pour the mixture into blender and puree the soup. Now strain if any residue is there and add it to pan and cook. add water for desired consistency. add salt, black pepper, nutmeg powder.

1)One can change the amount of Parsnip. Also can add veggies of their choice.
2)One can add little lemon juice at the time of consumption. it tested more yummy 🙂
3) One can use Chicken broth instead of vegetable broth.
