Parsnip…looks same like carrots just in cream color. It is high in vitamin and minerals, specially Potassium. It also contains antioxidants and dietary fibers. It is anti-cancer, also reduces the level of bad cholesterol. One day I went to grocery store and found Parsnip. I have read about it many times, but never tried. This is the first time I bought it. I searched for soup recipes using Parsnip, and found one. I made it with few changes and totally loved it.

Now cover the pan cook everything for 15 minutes or until all veggies are tender. Now pour the mixture into blender and puree the soup. Now strain if any residue is there and add it to pan and cook. add water for desired consistency. add salt, black pepper, nutmeg powder.
