One of my favorite dish in these cold, cozy weather!! 😛
1 Green apple, diced
1 1/2 Carrots, diced
1 stalk of celery, diced
1/4 cup onion, diced
1 Garlic clove
1 tomato, finely chopped
2 Cups of vegetable stock/Chicken stock
1 bay leaf
black pepper
salt as per taste
1/2 Tbsp brown sugar(optional)
Lemon juice(optional)
1/2-1 Tbsp Avocado oil/olive oil

In thick bottomed pan, heat oil on meium heat, now add diced onion celery, carrot, garlic and cook on low heat for 2 minutes. Now add vegetable stock, bay leaf cook for 10 minutes. Add tomato, apple, cover and cook for 3 minuts. Now remove bay leaf and transfer the mixture into blender. Blend till it gets nice smooth texture, Strain soup through a fine sieve. Again heat the soup for one minute, add salt,season with spices and enjoy!
