It’s been so many years since I had palak paneer and I so wanted to make it. My dad loved palak paneer but dear hubby is not a fan of palak curries and also paneer curries. But this time I said to myself, why not to make palak paneer even if hubby doesn’t like, atleast I can eat :P. So sharing my version of palak paneer which is I made and after tasting it my hubby asked me to make it again. Hope you guys will love too.
Serves: 2-3 peoples

Ingredients:
2 Handful of spinach leaves
water for blanching palak
150 Gm/5 Oz Cottage cheese/Paneer (cut into 1 inch cubes or shape u like)(pan fried)
1  small tomato(roughly chopped)
3 Garlic cloves
1/8 inch ginger
1/2 green chili(or as per the taste) or 1/2 Tsp red chili
1/4 Tsp garam masala
1/2 Tsp kasuri methi
1/4 Tsp cumin seeds
1/4 of finely chopped onion(if small, take 1/2 onion)
one tejpatta/bay leaf
2 Tsp oil
Salt for taste
1-2 Tbsp fresh cream(optional)
1 Tsp lemon juice
Ice cold water(Important)

Method:
Bring water to a boil in a pot. wash the spinach/palak into the running water and add it to boiled water. let it blanch for two minutes, now drain the hot water and add spinach into the ice cold water. Drain the excess water and make a smooth puree of palak and set aside(add 1-2 Tbsp water if needed). Meanwhile, heat oil in a pan, add half of chopped onion and let it cook till it gets transparent, now add ginger garlic and green chili paste. Cook for half minute, take out everything from the oil into the blender. Add tomato and make a puree without adding water.
Now in the same oil, add cumin seeds and let it splutter. Add remaining onion and cook till it gets cooked. Now add onion tomato puree and cook till oil separates from the side, add Tejpatta. Add spinach puree into the pan, Add kasuri methi, salt, mix well and let it cook on medium heat till gravy start to boil, add paneer. Add lemon juice, mix well. Add fresh cream and serve.

Tips:
1)Ice cold water helps to prevent the green color of palak.
2)frying paneer is optional. One can directly add paneer to the gravy. If using fried paneer, you don’t need to cook it again into the gravy.
3)Fresh cream is also optional.
