India’s very famous Tutti frutti cake!!! It’s an egg less and melt in mouth cake which is very popular in India, from kids to elders … everyone likes it.
Tutti frutti  is a colorful confection containing various chopped and usually candied fruits, or an artificially created flavoring simulating the combined flavour of many different fruits. In India Tutti frutti refers to candied papaya.
These are always small cubical pieces often brightly colored. The most common color being red, tutti-frutti are also available in rich green and yellow colors. These are used in various bakery products including cakes, milk-breads, cookies, dilkhush and buns. Tutti-frutti is also used in cold desserts as toppings for the ice-creams and sundaes. They are also used in sweet paans and sangeet (paper-masala).(courtesy:Wiki)

1 ½ cup all purpose flour/ maida
1/2 cup oil canola oil / olive oil/or softened butter
6 Tbsp  sugar(one can add more if wishes)
1 cup curd/yogurt
2 tsp vanilla essence
1 cup tutti frutti
1 ¼ tsp baking powder
½ tsp baking soda

Grease the baking Pan with butter  or line butter paper on the baking tray, Make sure cut the butter paper in right size before placing on baking tray. Preheat the oven at 180C/365 F.
Take A bowl, add curd and powder sugar and beat them for 3-4 mins.  Sieve all purpose flour, baking powder and baking soda 2-3 times, add tutti frutti ((keep aside some tuuti frutti for garnishing))and mix well. Now add vanilla essence and oil in curd mixture, mix well.  Add flour into curd mixture and gently mix it.
Pour the batter in the greased pan and tap it. Sprinkle some tutti frutti on the top of cake ,which we kept aside earlier. Bake for 30-35 mins until the top becomes nice golden and tooth pick comes clean. Remove from oven and cool down on wire rack. Cut into desire shape and enjoy…………….. 🙂

1)This amount of sugar is perfect for me, keep in mind that tutti frutti are also sweet. But still if you want more sweet, you can increase the amount of sugar.
2) Do not  over mix the mixture.
3) As oven temperature varies by individual, one can cook  5 min extra or more than suggested time.
