These cutlets/ vade can be a good alternative to sabudana vada.
to cook sawa rice:
1/4 Cup sawa rice. bhagar/variche tandool
1 1/2 cup water
cooked sawa rice
1 medium size potato, boiled and peeled
3 Tbsp peanut powder/coarsely grounded peanuts
1/4 Tsp cumin/jeera
2 green chilies, finely chopped
2-3 tbsp coriander, finely chopped
salt for taste
oil for frying
in thick bottomed pan, bring water to boil, add salt and few drops of oil. Meanwhhile, wash sawa rice 2-3 times in by changing water(do not soak it). Add washed sawa rice into boiling water and let it cook for 1 -2 minutes and cover it with lid. turn the flame on medium to low and cook till all water is absorb and sawa rice becomes double to its size and fluffy. Let it cool.
In a bowl Mix all the ingredients till it combined well. Take small portion af this mixture and form into ball, flatten a bi using your palm. Repeat the same process for remaining mixture. In a nonstick pan heat 1-2 tbsp oil and place some cutlets onto it. cook till both sides becomes golden. Enjoy hot with dahi chutney, peanut chutney, plain yogurt or with coconut chutney.
Another method is, to deep fry. follow the same process but instead of pan fry, heat enough oil for deep frying and fry the cutlets till the becomes golden.
