Popeyes, The sailor! Who remember watching this animated cartoon? Where the main character used to eat/drink spinach whenever he wanted to be more strong. I remember watching it and that’s why I feel the name ‘Popeyes Muffins’ is perfect for this recipe. It has all the goodness, nutrition’s of Spinach, Quinoa and Oats.
Totally new invention and a new addition in my healthy recipes but totally in love with it!!

Ingredients:
1 cup all-purpose flour/ whole wheat flour
1/2 cup Quinoa
1/2 cup Oats
1/2 cup sugar (or as per taste)
2 tsp baking powder
½ tsp baking soda
1½ tsp ground cinnamon
½ tsp salt
¼ cup avocado oil/ or any cooking oil
¾ cup milk
1 (6 ounce) bag fresh baby spinach
½ cup mashed banana (from about 1 to 2 bananas)
2 tsp pure vanilla extract

Instructions:
Preheat oven to 350°F and line two 12-cup muffin pans with paper liners(I used mini muffin pan).
In mixer grinder, add quinoa and make fine powder. Add oats and make fine powder, Transfer it in a bowl.
Whisk together all the dry ingredients in a large bowl, Set aside. In a blender, place oil, milk, and spinach. Blend on high for about 30 seconds or until completely pureed. Add banana and vanilla; blend again to mix. Pour pureed mixture into dry mixture and fold together gently until completely combined. Fill muffin cups about ⅔ full and bake 18-20 minutes or until a toothpick inserted into the center comes out clean.

Tips:
1)One can replace the all purpose flour with whole wheat flour. They can also replace the quinoa and oats flour too.
2)I made quinoa and oats flour in my mixer grinder but one can use ready made quinoa and oats flour.
