My nutritionist told me not to eat rice at all , but it’s very difficult to not have rice and there are so many recipes/dishes specifically asks for rice. I had no option, I decided to have quinoa instead of rice. So these days I’m experimenting so many traditional dishes with different ingredients, I’m glad these experiments are getting success and I am definitely loving it.
We always makes prawns pulao/kolambi bhat with rice but as I’m not eating rice these day. I am gonna use quinoa. I made this pulao on weekend which I loved very much. Today, I made it again and sharing the recipe with you all.

Ingredients:
To marinate the prawns:
15-16 prawns
1/4 Tsp Turmeric
less than 1/2 Tsp salt
2-3 Tsp lemon juice
Marination:
1/2 Tsp coriander cumin powder
1 garlic clove
1/4 inch ginger
2 black pepper
1 Cloves
1/2 Javitri
1 bay leaf
1 small black cardamom
1/4 inch cinnamon stick
1/2 star anise
5-6 Mint leaves
2 Tbsp crushed Fried/Baked onion
Method:
Clean , deveined the prawns and wash int running water. Drain excess water. Add turmeric, salt, lemon juice, mix well and keep aside for 15 minutes. It will leave some water because of lemon juice and salt. Drain that water, make ginger garlic paste, add it to prawns and add all the remaining ingredients, mix well and keep aside for another 20-30 minutes.

Quinoa :

1/2 Cup quinoa
1 1/4 Cup water
2-3 Black pepper
2 Cloves
1 Javitri
1 Bay leaf
1/4 Tsp shahi jeera
1 Small black cardamom
1/2 Inch cinnamon stick
1/2 Star anise
1/2 Tsp ghee
salt as per taste
Method:
In thick bottomed vessel, take water add all the ingredients except quinoa. Bring the water to boil, add quinoa. Mix and let it boil for 2 minutes on high flame, now reduce the heat to medium and cover the vessel with lid. Let it cook on medium- low heat till quinoa becomes fluffy and cooked completely(grain will be transparent)(takes around 18-20 minutes).Β  Remove from the heat and let it cool.

To cook pulav:
1/2 Onion thinly sliced
2Β  Garlic cloves
1/4 Inch ginger
1/4 Tsp shahi jeera
2 Red chili1/2-1 tsp red chili powder
1/2 Tomato(optional)(finely chopped)
10-12 Mint leaves
1 1/2- 2 Tbsp oil
2 Tbsp water
Coriander leaves for garnishing

Method:
Heat oil on medium heat, add shahi jeera, add sliced onion. Cook till onion becomes pink, now add ginger garlic paste and saute till it leaves raw smell. Add tomato, cook till it becomes mushy and leaves oil from the side.
Now add the marinated prawns with whole masala. add red chili powder, mix well and cook for 2-3 minutes till prawns becomes pink. Now add cooked quinoa, add mint leaves, taste for salt. Sprinkle 2 Tbsp water, cover and cook for 4-5 minutes.Β  Garnish with chopped coriander and fried/baked onion and enjoy.
