We get different types of potatoes and yams in grocery store. In India we get a root vegetable, a type of potato which is known as Ratale or Shakarkandi. It has purple skin, a densely textured cream colored flesh and less sweet than the sweet potatoes. To find those here is very difficult, but recently I went to a Asian market and found it as a Japanese yam. I wanted to give it a try and guess what, It is exactly the same we call Ratale/Shakrkandi. I was so glad to find it.  Every Thursday I do fasting but I don’t like to eat sabudana khichadi every time. These yams are good alternative to normal potatoes, sabudana khichadi, sabudana vada or any high carb food. I made hash brown using these yams.  It is sweet, spicy, crispy from the outside and fluffy, soft from the inside!

Ingredients:
1 Medium sized purple yam/ sweet potato or ratale
1/2 green chili chopped(as per taste)
1/2 Tsp cumin seeds
1- 2Tsp clarified butter/desi ghee
salt as per taste
chopped coriander(optional)

Method:
Peel and shred purple yam on the bigger size of shredder(work quickly as it turns black because of oxidization). In nonstick pan heat ghee and make tadka with cumin seeds. Add green chilies, now add grated yam, salt and mix well. turn the heat on medium to low heat, cover and cook for 2-3 minutes. Now turn the heat on medium to high heat and cook on the both sides(flipping eventually), till they becomes golden- golden brown from the outside and fully cooked from inside. Garnish with chopped coriander and serve with dahi raita, kakadichi koshimbir(cucumber raita) or plain yogurt.

Tips:
1) While grating the potatoes, work fast as the they turn black because of oxidization with Oxygen.
2) To prevent oxidization, you can transfer it into cold water. But make sure to drain all the water completely before using it.
3)I didn’t use any binding agent, as yam became sticky while cooking.
4)If using steel pan or other metal pan, use a good amount of ghee(around 1-2 Tbsp) to prevent it by sticking.
5) Some people don’t eat cumin seeds, salt, green chilies on fasting day so, one can simply skip these ingredients and enjoy simple hash browns.
