‘Kairi panha’ is a Maharastrian summer drink which is made using raw mangoes. “Kairi” means raw mango in Marathi language. This is a yellow light colored drink which is specifically consumed in summer to beat the intense heat. In India, Summer is the season of the king of fruits, Mangoes. At my grandpa’s place we have 5-6 mango trees, are different varieties. Whenever the season starts… we get lot’s of green, ripe mangoes for us and believe me no store bought mango tastes the way these farm fresh Mangoes tastes. We enjoy it as much we can. Weather it is freshly squeezed aam ras(mango juice) or pickle it’s just amazing(even writing made me drool 😛 ). We make this panha very often in summer which is little sour and sweet and has it’s unique taste. There are different methods to prepare it, I’m sharing one of my method to make it.

1 big green mango
1- 1/2 Tbsp jaggery powder/ sugar(on can add more as per the taste)
1/2 Tsp freshly grounded coriander and cumin powder
1/4 Tsp black salt
2 Cups water or as per desired

Wash green mango in running water. Put 1/2-1 cup water in a pot, add green mango, cover and cook on low heat for 12-15 min till the mango becomes soft. Let it cool, peel the skin and remove the pulp from skin and seed and set aside and throw the skin and seed. In a blender, take all ingredients and blend it till a smooth puree. add some ice cubes and serve chilled.

1) Jaggery has more nutrients, healthy than sugar also it has cooling effect on body in summer.
2) Black salt has digestive properties but if it’s unavailable, use normal salt.
3) I like tangy/sour flavor more, so this amount of sugar is perfect for me. But if one wishes, take more jaggery/sugar.
4) I made Coriander cumin powder after roasting it a little bit. One can use store bought powder too but fresh one tastes more better.
