Lal math/Amaranth is particularly rich in manganese, magnesium, iron, and selenium. Also an excellent source of the Daily Value of protein, dietary fiber, and some dietary minerals. Cooked amaranth leaves are an excellent source of vitamin A, vitamin C, calcium, manganese and folate. So why not to add this nutrient leafy vegetable in our daily diet!

Ingredients:
6 Cups Lal math/ amarnth/red leaves
1 Big onion/2 medium onions(Chopped)
1/2 tsp Cumin
2-4 Garlic cloves(Crushed)
1 Tbsp Cumin Coriander powder
1/2 Tbsp Garlic chutney
1/-1 Tsp red chili powder(or as per taste)
pinch of asefoetida
salt as per taste
2-3 Tbsp oil

Method:
Pluck leaves from the stem and wash it in running water to remove any traces of soil.  In a pan heat oil, add cumin and crushed garlic. saute for 30 sec and add chopped onion. Saute till it becomes transparent. Now add all the remaining ingrdeints, saute for 30 sec. now add washed amaranth leaves, add salt mix well. Cover and cook till it’s done completely(The quantity of vegetable will be reduced after cooking it). takes around 8-10 minutes.
Serve with Bajara roti, chapati and enjoy!
