When I was a kid, I always wondered about how people make different and attractive sweets in the sweets shops. They are also organized beautifully so everyone, specially kids gets attracted to them. But when I tried to make it, It was very easy. The one sweet we get in sweet shop is Nuts roll. I didn’t know the procedure but when I made Walnut-Dates roll, I found it easy and then I made mixed dry fruits/nuts roll which is a very good sweet for Diwali. These Nuts roll can be carried as a protein bar, picnic food or even perfect for travelling. It is always makes me happy, If I can enjoy festivals in healthy way. These nuts- dates roll are perfect as they are healthy and sugar free so we don’t need to be worried about sugar.


2 Cup Dates/khajoor(finely chopped)
1 1/2 Cup mixed nuts(Almonds, pistachios, cashews, walnuts )(slightly roasted and pounded/coarsely grounded)(I used 1 cup)
1/2 Tsp Green cardamom powder(optional)
1/2 tsp Ginger powder (optional)
1/2 Tbsp clarified butter/desi ghee
2- 2 1/2 Tbsp white poppy seeds/ Khaskhas


Heat pan a pan on medium to low heat. Add poppy seeds, stir continuously to roast it evenly, once it starts to splutter(takes around a minutes), remove it from the heat, remove from the pan and set aside.
Heat ghee in a thick bottomed nonstick pan. Add chopped dates and using spatula, crush it till it becomes soft and mushy(it takes few minutes). Mix  pounded mixes and cardamom powder together. Add it to dates little by little and mix till it is well combined.
Remove from the kadhai and make a cylindrical roll. On a flat surface, sprinkle roasted poppy seeds evenly and carefully roll the cylindrical roll over poppy seeds, so they can stick evenly all over the sweet roll. Now place that sweet roll into cling wrap, wrap it tightly. Leave it for 1-2 hours or refrigerate it for a hour. Remove cling wrap and using a sharp knife, cut into slices. Store in a cool, dry place. It stays fresh for 2-3 weeks in room temperature.

1) Chopping  dates finely helps to mash it.
2)Do not keep the nuts into big chunks, it will make difficult to form a roll.
3) Do not over cook the dates, it will be dry. It will make difficult to combine the nuts and from into roll.
4)If it becomes dry , add 1-2 Tbsp milk and mix well. It will moist the mixture.
5)If mixture sticks to palm while rolling it, apply some ghee to the palms to avoid sticking.
6)Make sure the roll cools completely before slicing it.
