This dish is not one pot meal, but we can say healthy as it is loaded with veggies.

Ingredients:
2 1/2 Cup Basamati rice (uncooked)(I used rice cooker’s measuring cup)
1 1/2 Cup sliced onion
1 1/2 Finely chopped Tomato
1/2 Cup diced Carrots
1/2 Cup roughly chopped Cauliflower

1/2 Cup chopped green Capsicum(mixed capsicum)
1/4th Cup Green peas
1/3rd Cup Mint
1 inch Ginger
4  big Garlic cloves(if small take 8-10)
5-6 green Chilies
1/2 Tsp cumin seeds
4 Tbsp Oil
1-2 Tbsp lemon juice(optional)
salt for taste
dry masala:
1 Tsp garam masala
1/2 Tbsp and 1 Tsp red chili powder
1/2 Tsp turmeric

Method:
Wash rice with cold water for 3-5 times or until water comes clean, transfer washed rice into rice cooker, add 5 cups water which is double of rice. Add salt and 1 Tsp ghee/oil(mix well), select white rice option and let it cook. Make Ginger garlic paste, slit green chilies.

Once the rice is cooked, transfer it into a big bowl and let it cool completely.

In big pan/kadhai, heat oil. add cumin seeds, add onion and saute till onion turns pink(sprinkle some salt). Add chopped tomatoes, green chilies and ginger garlic paste and cook till it leaves oil from sides. Now add green peas, diced carrots, cauliflower and capsicum, saute for 1-2 minutes. Now add all the dry masala mentioned in the ingredients and saute for 30 seconds. Meanwhile add mint leaves into cooled rice and mix gently, This is the perfect time to break lumps of rice if any.  Add this cooled rice into the kadhai, add salt and mix gently to combine everything. Cover and cook for 5-8 minutes on medium flame. Sprinkle some lemon juice, mix again and serve with boondi raita or as a side dish.

Tips:
1) I like rice cooker to cook rice as it helps me to cook rice perfectly.
2) I used Basamati rice but one can use the rice of their choice.
3) When adding salt, keep in mind that we have already added salt at the time of cooking rice and also in onion. So be careful.
4) We are not cooking vegetables completely. If one wishes, can cook veggies for longer time, but keep in mind that the veggies will be mushy and will ruin the taste of rice.
