Lapsi/Daliya, is an Indian sweet dish made of Broken/cracked whole wheat, ghee,  jaggery, milk and dryfruits. It is healthy as it is loaded with high fibre which helps managing diabetes, also helps to  control cholesterol. It can be served as dessert or as breakfast.

I have used homemade broken wheat. One can use Store bought.

Making broken wheat at home is very easy:

Take 1 cup whole wheat, wash it thoroughly 2-3 times, drain the water. On a clean cloth, spread the washed wheat and let it dry for 30 minutes in the shadow. In  a mixer jar, take half of the wheat and pulse it until it’s coarsely grounded, follow the same method for remaining wheat. Make sure that it’s not fine in texture.

Ingredients:

1/2 Cups Broken Wheat

2 TBSP Ghee

1 Cup Milk

3/4 Cups water, 1/4 cup water aside

1/2 Green Cardamom

2-3 TBSP jaggery or as per taste

1/2 Tbsp mixed dryfruits

Method:

In a pan/ kadhai heat ghee on low flame, add broken wheat and saute until golden. Meanwhile, mix water and milk together and heat till it starts boiling. Once the wheat is ready, add dry fruits saute for 30 sec. Add heated milk water mixture, cover and let it cook for few minutes until broken wheat completely cooked and soft. If you feel it’s uncooked, add another 1/4 cup of hot water. After cooking it will get thicker, now add Jaggery and green cardamom powder. Mix it well, cover for another minute and serve it hot/cold.

Tips:

  1. Broken wheat can be made from scratch or bought it from the store. I have observed that the store bought broken wheat takes longer to cook.
  2. Hot milk+water helps to cook it faster and also gives nice tatste.
