Serves:3-4 People
Ingredients:
20-25 pc of prawns, shelled and de-veined (defrost if frozen)
2 tablespoons peanut oil (or any flavourless oil)
3-4 large garlic cloves, chopped
1/2 inch fresh ginger, chopped
1 red chili, chopped (de-seeded if you wish)
2 1/2 Tbsp tomato ketchup
1 Tbsp dark soy sauce
1 tsp sugar
1 teaspoons cornflour, mixed with 2-3 Tbsp water
75 ml boiling water
1/2 Tbsp lime juice
1 spring onions, chopped
2 tablespoons coriander leaves, chopped

Method:
Heat a wok.pam over high heat, add oil.  Add chopped garlic, ginger, chillies and stir fry for about 30 seconds, until the chillies have darkened (but careful not to let it burn). Add the prawns and continue frying for about 4-5 minutes – until they turn pink.Now add tomato ketchup, soy sauce, sugar and the cornflour mixture and bring to a simmer and pour in the boiling water. Add lime juice and give it all a good stir till the sauce has thickened. Garnish with spring onion and chopped coriander and serve.
